Ingredients
  

  • 1 cup dried elderberries
  • 3 cups water
  • ½ to ¾ cup honey to taste

Method
 

  1. Add the dried elderberries and water to a saucepan.
  2. Bring to a gentle boil, then reduce heat and simmer uncovered for 40-45 minutes, until the liquid reduces by about half.
  3. Remove from heat and let cool slightly.
  4. Strain the liquid through a fine mesh strainer or cheesecloth, pressing the berries to extract all the liquid. Discard the solids.
  5. While the liquid is warm (not hot), stir in the honey until fully dissolved.
  6. Transfer the syrup to a clean glass jar and let it cool completely before sealing.
  7. Store refrigerated.

Notes

  • Always cook elderberries before consuming. Raw elderberries should not be eaten.
  • Honey should be added only after the liquid has cooled slightly to preserve its natural properties.
  • Store in the refrigerator for up to 2 weeks.
  • This syrup is alcohol-free and suitable for family use (do not give honey to children under 1 year old).
