Ingredients
  

  • For the Tofu:
  • 400 g firm tofu drained and pressed
  • 2 tbsp cornstarch or potato starch for coating
  • 1 tbsp olive oil or avocado oil spray
  • Pinch of salt
  • For the Sauce:
  • 1 cup dashi stock or mushroom broth for vegan
  • 2 tbsp soy sauce
  • 1 tbsp mirin optional, or ½ tsp sugar for sweetness
  • 1 tsp grated ginger
  • For Garnish:
  • 1 tbsp grated daikon optional
  • 1 green onion finely sliced
  • 1 tsp sesame seeds
  • Small pinch of chili flakes or shichimi togarashi

Equipment

  • 1 Air Fryer 4L or larger for even frying
  • 1 Mixing Bowl For coating tofu
  • 1 Paper Towels To remove excess water from tofu
  • 1 Tongs For turning tofu cubes
  • 1 Saucepan For dashi or soy broth

Method
 

  1. Prepare the tofu: Drain and press tofu for 20 minutes to remove excess moisture. Cut into 1-inch cubes and pat dry with paper towels.
  2. Coat the tofu: In a bowl, toss tofu cubes gently with cornstarch and salt until all sides are evenly coated.
  3. Preheat the air fryer: Set the air fryer to 190°C (375°F) and preheat for 3 minutes. Lightly spray the basket with oil.
  4. Air fry the tofu: Place the tofu cubes in a single layer in the fryer basket. Spray lightly with oil. Cook for 12 minutes, flipping halfway through until golden and crisp.
  5. Prepare the sauce: In a small saucepan, mix dashi, soy sauce, mirin, and grated ginger. Heat on low for 2–3 minutes until fragrant.
  6. Assemble: Place the hot tofu cubes in a shallow serving bowl. Pour the warm sauce over them.
  7. Garnish and serve: Top with grated daikon, sliced green onions, sesame seeds, and chili flakes. Serve immediately for that perfect crispy-meets-soft texture.

Notes

  • For extra crispiness, use firm or extra-firm tofu and ensure it’s well-pressed before air frying.
  • You can replace dashi with mushroom or vegetable broth for a fully vegan version.
  • Avoid overcrowding the fryer basket to allow even air circulation.
