Method
 

  1. Season the chicken: Season the chicken breasts with salt, pepper, and optional garlic powder. If they’re thick, slice them horizontally or pound thin for even cooking.
  2. Air fry the chicken: Preheat air fryer to 375°F (190°C). Place chicken in a single layer. Air fry for 8–10 minutes, flipping halfway, until lightly golden and just cooked through.
  3. Brush with pesto: Remove the chicken briefly and brush the tops generously with basil pesto. The heat melts the pesto slightly, releasing its fresh basil aroma.
  4. Add cheese to create the “melt”: Place a slice of mozzarella (or shredded cheese) over the pesto. Ensure it covers the top evenly for the perfect melty finish.
  5. Return to air fryer: Increase heat to 400°F (200°C). Air fry for 2–4 minutes, or until cheese is melted, bubbly, and lightly golden.
