Method
- Preheat air fryer to 400°F (200°C) for 3–5 minutes.
- In a large mixing bowl, toss halved fingerling potatoes with olive oil, garlic powder, paprika, salt, and pepper until well coated.
- Place seasoned potatoes in the air fryer basket in a single layer. Do not overcrowd; cook in batches if needed.
- Air fry at 400°F (200°C) for 18–20 minutes, shaking the basket halfway through for even browning.
- Once golden and crispy, remove and garnish with fresh parsley if desired. Serve immediately.
Notes
- You can substitute fingerling potatoes with baby potatoes or Yukon golds cut into wedges.
- Leftovers store well in an airtight container and reheat beautifully in the air fryer.
- Add fresh rosemary or thyme for an herby finish!
