Alice Springs Chicken Recipe

This recipe for Alice Springs Chicken is an all time favourite and originated in Outback Steakhouse. This is your typical savory recipe with juicy grilled chicken breasts covered in honey mustard sauce, crispy bacon, melted cheese and sautéed mushrooms. It’s a rich, flavorful dish that will hold you over through your next meal. This is almost as a good as from the restaurant version, but I bet even better doing it homemade and easy enough to whip up for family dinner or game day special!Ingredients:

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup sliced mushrooms
  • 4 slices of bacon
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Cheddar cheese
  • 1/2 cup honey mustard homemade or store-bought
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

  1. Chicken Marination: Honey mustard + Dijon Mustard on top of Chicken Breasts. Cover with cling wrap and marinate for 30 minutes to 2 hours in the fridge.
  2. If we marinate the chicken, we can make a nice cup of coffee or cook a beer fry, watching how the bacon browns in its juices in the skillet at medium heat. Take out the bacon and keep aside and leave a little bit of bacon grease in the pan.
  3. Prepare mushrooms: In same skillet add olive oil and butter, cook the mushrooms until soft and browned, about 5 minutes. Take out of the frypan and transfer to a plate.
  4. To cook the chicken: Preheat your oven to 400°F/200°C. Heat the olive oil in the same skillet and cook chicken breasts over medium heat for 4-5 minutes per side until golden brown but not cooked through.
  5. Construct the dish: add partially cooked chicken to a casserole dish. Evenly distribute cooked bacon slices and sautéed mushrooms over the top, then sprinkle a generous amount of Monterey Jack and Cheddar cheese on each piece of chicken.

Notes

For added flavor, grill the chicken instead of cooking it in the skillet before baking.
Use your favorite cheese combination for a personalized touch—Pepper Jack adds a nice kick!
Serve with roasted potatoes or a side salad to balance the richness of the dish.
