- Chicken Marination: Honey mustard + Dijon Mustard on top of Chicken Breasts. Cover with cling wrap and marinate for 30 minutes to 2 hours in the fridge.
- If we marinate the chicken, we can make a nice cup of coffee or cook a beer fry, watching how the bacon browns in its juices in the skillet at medium heat. Take out the bacon and keep aside and leave a little bit of bacon grease in the pan.
- Prepare mushrooms: In same skillet add olive oil and butter, cook the mushrooms until soft and browned, about 5 minutes. Take out of the frypan and transfer to a plate.
- To cook the chicken: Preheat your oven to 400°F/200°C. Heat the olive oil in the same skillet and cook chicken breasts over medium heat for 4-5 minutes per side until golden brown but not cooked through.
- Construct the dish: add partially cooked chicken to a casserole dish. Evenly distribute cooked bacon slices and sautéed mushrooms over the top, then sprinkle a generous amount of Monterey Jack and Cheddar cheese on each piece of chicken.
Notes
For added flavor, grill the chicken instead of cooking it in the skillet before baking.
