  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried thyme or rosemary
  • 1 lemon sliced (optional)

Method
 

  1. Pat chicken quarters completely dry, then coat evenly with olive oil to help crisp the skin and allow the spices to adhere perfectly.
  2. Mix salt, pepper, paprika, garlic powder, onion powder, and herbs, then rub the seasoning generously over the chicken, making sure to get under the skin for maximum flavor.
  3. Place the chicken on a baking sheet (preferably on a wire rack) skin-side up so the heat circulates and crisps the skin beautifully.
  4. Bake at 400°F (205°C) for 40–45 minutes, or until the internal temperature reaches 175°F -185°F for tender, fall-off-the-bone meat.
  5. Let the chicken rest 5 minutes, then serve with roasted veggies, rice, salads, or mashed potatoes for a complete, comforting meal.
