Prepare the Chicken Skewers:
- Preheat a grill to medium-high heat (400°F/200°C). If using wooden skewers, soak them in 20 minutes of water so they don't burn.
- To start with the chicken, toss chicken pieces with olive oil, garlic powder, smoked paprika, salt, and pepper in a mixing bowl. Toss to coat the chicken evenly.
Assemble the Skewers:
- Skewering the seasoned chicken pieces with a small gap between each piece between the skewers for even cooking.
Grill the Chicken:
- Place the skewers on the grill and cook for 3–4 minutes on each side until the chicken reaches an internal temperature of 165°F (74°C). Remove from heat and set aside.
Prepare the Bang Bang Sauce:
- Whisk together the mayonnaise, sweet chili sauce, sriracha, and honey in a small bowl until smooth. Adjust the spice level as needed.
Serve:
- Drizzle the Bang Bang sauce over the grilled chicken skewers, or use it as a dipping sauce on the side. Garnish with chopped green onions, sesame seeds, and lime wedges for extra flavor.
Notes
For juicier chicken, marinate it in olive oil and spices for 30 minutes before grilling.
