Cook the berries: Add beautyberries and water to a saucepan. Bring to a boil, then simmer for 20 minutes until berries soften and release color.
Strain the liquid: Pour mixture through a fine mesh strainer or cheesecloth. Press gently to extract liquid. Discard solids.
Sweeten and thicken: Return the liquid to the saucepan. Stir in sugar and pectin. Bring to a rolling boil and cook for 5-7 minutes, stirring constantly.
Test consistency: Spoon a small amount onto a chilled plate. If it wrinkles slightly when pushed, it’s ready.
Jar and cool: Pour hot jelly into sterilized jars. Let cool at room temperature before sealing and refrigerating.
