Ingredients
  

  • 2 cups fresh beautyberries
  • 2 cups water
  • cups granulated sugar
  • tbsp powdered fruit pectin

  • 1 Large saucepan
  • 1 Fine-mesh strainer or cheesecloth
  • 1 Wooden spoon
  • 1 Measuring cups
  • 1 Sterilized Glass Jar with Lid

Method
 

  1. Cook the berries: Add beautyberries and water to a saucepan. Bring to a boil, then simmer for 20 minutes until berries soften and release color.
  2. Strain the liquid: Pour mixture through a fine mesh strainer or cheesecloth. Press gently to extract liquid. Discard solids.
  3. Sweeten and thicken: Return the liquid to the saucepan. Stir in sugar and pectin. Bring to a rolling boil and cook for 5-7 minutes, stirring constantly.
  4. Test consistency: Spoon a small amount onto a chilled plate. If it wrinkles slightly when pushed, it’s ready.
  5. Jar and cool: Pour hot jelly into sterilized jars. Let cool at room temperature before sealing and refrigerating.

Notes

  • Jelly will thicken further as it cools.
  • For best color, use fully ripe beautyberries.
  • Store refrigerated for up to 3 weeks or freeze for longer storage.
