Ingredients

  • 4 Berkshire pork chops bone-in or boneless, about 1-inch thick
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tsp fresh thyme optional
  • 3 cloves garlic minced
  • 1/2 tsp red pepper flakes optional for heat

Equipment

  • 1 Cast iron skillet or heavy-bottomed pan
  • 1 Meat thermometer
  • 1 Tongs
  • 1 Cutting board
  • 1 Knife
  • 1 Mixing bowl

Method

  1. Prepare the Pork Chops: Pat the pork chops dry with a paper towel to remove excess moisture. In a small bowl, mix salt, black pepper, garlic powder, and smoked paprika. Rub this seasoning mix evenly over both sides of the pork chops.

  2. Preheat the Skillet: Heat a cast-iron skillet over medium-high heat and add olive oil.
  3. Sear the Pork Chops: Place the pork chops in the hot skillet and sear for 3-4 minutes on one side, until a golden-brown crust forms.
  4. Flip and Cook: Flip the pork chops and add butter, minced garlic, and thyme to the skillet. Cook for another 3-4 minutes, occasionally spooning the melted butter over the chops.
  5. Check Temperature: Use a meat thermometer to check for doneness. The internal temperature should reach 140°F (60°C) for juicy, slightly pink pork chops. If needed, cook for an additional 1-2 minutes.
  6. Rest and Serve: Remove the pork chops from the skillet and let them rest on a plate for 5 minutes. This allows the juices to redistribute. Serve warm with your favorite side dishes.

Notes

  • For extra tenderness, brine the pork chops in salt water (1/4 cup salt + 4 cups water) for 30 minutes before cooking.
  • To add a smoky flavor, finish the pork chops on a grill for 1-2 minutes per side.
  • Serve with mashed potatoes, roasted asparagus, or a fresh salad for a balanced meal.
