Ingredients
  

  • 1 lb ground beef 80/20 – high-fat content for juiciness
  • 1/2 lb ground pork – optional adds moisture and flavor
  • 2 eggs – acts as binder
  • 1/4 cup grated cheese – optional cheddar or mozzarella
  • 1 tbsp butter or tallow – melted adds fat and flavor
  • 1 tsp salt – adjust to taste
  • 1/2 tsp black pepper – optional if tolerated on carnivore
  • 2 tbsp beef liver – optional finely chopped or blended for nutrient boost

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly grease a loaf pan with butter or tallow.
  • In a mixing bowl, combine ground beef, optional ground pork, eggs, melted butter or tallow, grated cheese, salt, pepper, and optional liver.
  • Mix gently until everything is just combined. Avoid over-mixing to keep the meatloaf tender.
  • Press the meat mixture into the loaf pan and smooth the top with a spatula.
  • Bake uncovered for 55–60 minutes or until the internal temperature reaches 160°F (71°C).
  • Remove from the oven and let rest for 10 minutes before slicing and serving.

Notes

  • Store leftovers in the fridge for up to 4 days or freeze individual slices for meal prep.
  • You can top it with cheese, melted butter, or even bone broth when reheating for added moisture.
  • Liver is optional but highly recommended for extra nutrients.
  • Avoid overbaking to keep it juicy. Let it rest before slicing.
