Ingredients
  

  • 2 lbs. baby red potatoes washed and quartered
  • 1 lb. smoked sausage sliced into rounds
  • cups shredded cheddar cheese
  • 1 packet ranch seasoning mix about 1 oz.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley optional, for garnish
  • ½ cup sour cream optional, for serving
  • ¼ cup sliced green onions optional, for garnish

Instructions
 

  • Preheat the Oven: Heat your oven to 400°F (200°C). For easy clean up, line a large baking sheet with parchment paper or foil.
  • Prepare the Potatoes: Add quartered potatoes to a large mixing bowl, drizzle with olive oil and season with garlic powder, paprika ranch seasoning and black pepper.
  • Arrange on the Baking Sheet: Distribution of seasoned potatoes on prepared a baking sheet evenly. And it should be done in a single layer for even roasting.
  • Roast the Potatoes: Put the potatoes in a preheated oven at 200°C for minutes, give them a shake halfway through to brown all. Toss occasionally, until potatoes are golden brown and crispy at the edges.
  • Add the Sausage: Remove the baking sheet fromt he oven after 25-30 minutes and top with sliced smoked sausage. Mix it all up to evenly spread the sausage.
  • Add the Cheese: Top the potato and sausage mixture with plenty of shredded cheddar cheese. Place baking sheet back in oven and roast for another 10 to 15 minutes, or until cheese is bubbly and melted, sausage browned.
  • Garnish and Serve: When the potatoes and sausage have finished cooking, take them out of the oven. Garnish with fresh chopped parsley and/or sliced green onions if desired. Serve with sour cream, if desired.

Notes

  • Variations: You can swap out the smoked sausage for other types like Italian sausage, kielbasa, or chorizo for a different flavour profile.
  • Cheese Options: Try using other cheeses like Monterrey Jack, Pepper Jack, or a sharp cheddar blend for added richness.
  • Vegetables: You can also add extra veggies like bell peppers or onions to the baking sheet for a more complete meal.
