Ingredients
  

  • 2 pounds chicken thighs or drumsticks
  • cup soy sauce
  • ½ cup cane vinegar or white vinegar
  • 6 cloves garlic smashed
  • 3 bay leaves
  • 1 teaspoon whole black peppercorns
  • 1 tablespoon brown sugar optional
  • 1 tablespoon cooking oil
  • 1 cup water

Method
 

  1. Heat oil in a deep skillet over medium heat until warm.
  2. Add chicken pieces and lightly brown on all sides until golden.
  3. Pour in soy sauce, vinegar, water, garlic, bay leaves, and peppercorns.
  4. Bring to a gentle boil, then lower heat and simmer uncovered until chicken is tender and sauce reduces.
  5. Stir in brown sugar if using and cook until sauce turns glossy and rich.
  6. Remove from heat and let rest briefly before serving.

• Bone-in chicken creates a richer sauce and deeper flavor.
• Letting the dish rest improves taste as the chicken absorbs the sauce.
