- Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper.
- Mix base: In a large bowl, combine ground chicken, egg, breadcrumbs, salt, pepper, garlic powder, onion powder, and Dijon mustard. Mix until evenly combined.
- Form base: Press half the chicken mixture into the bottom of the pan.
- Add filling: Layer ham slices and both cheeses over the base.
- Top and shape: Add remaining chicken mixture on top, sealing the edges to enclose the filling.
- Prepare topping: In a small bowl, mix breadcrumbs, Parmesan, and melted butter. Sprinkle evenly over the meatloaf.
- Bake: Bake uncovered for 40–45 minutes, or until internal temperature reaches 165°F.
- Rest: Let rest 10 minutes before slicing. Garnish with chopped parsley and serve.
Notes
This meatloaf freezes well! Wrap tightly and store in the freezer for up to 2 months. Reheat in oven at 350°F until warmed through.
