Ingredients
  

  • For the Meatloaf Base:
  • 1 lb ground chicken
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • For the Filling:
  • 6 slices deli ham
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Swiss cheese
  • For the Topping:
  • 1/3 cup breadcrumbs
  • 2 tbsp grated Parmesan
  • 1 tbsp melted butter
  • Fresh parsley optional, for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper.
  2. Mix base: In a large bowl, combine ground chicken, egg, breadcrumbs, salt, pepper, garlic powder, onion powder, and Dijon mustard. Mix until evenly combined.
  3. Form base: Press half the chicken mixture into the bottom of the pan.
  4. Add filling: Layer ham slices and both cheeses over the base.
  5. Top and shape: Add remaining chicken mixture on top, sealing the edges to enclose the filling.
  6. Prepare topping: In a small bowl, mix breadcrumbs, Parmesan, and melted butter. Sprinkle evenly over the meatloaf.
  7. Bake: Bake uncovered for 40–45 minutes, or until internal temperature reaches 165°F.
  8. Rest: Let rest 10 minutes before slicing. Garnish with chopped parsley and serve.

Notes

This meatloaf freezes well! Wrap tightly and store in the freezer for up to 2 months. Reheat in oven at 350°F until warmed through.
