Ingredients
  

  • 1 lb chicken breast - sliced into thin strips
  • ¼ cup olive oil - for marinade
  • 2 tbsp lemon juice - freshly squeezed
  • 2 cloves garlic - minced
  • 1 tsp dried oregano
  • 1 cup Italian-style breadcrumbs
  • ¼ cup grated Parmesan
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp butter - melted optional finishing touch

Method
 

  1. In a mixing bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add chicken strips and toss to coat. Cover and let marinate for at least 30 minutes (or up to 2 hours).
  3. In a separate bowl, mix breadcrumbs and grated Parmesan.
  4. Remove chicken from marinade, roll each piece in the breadcrumb mixture until well coated.
  5. Thread the coated chicken onto skewers.
  6. Grill over medium-high heat for 3-4 minutes per side until fully cooked.
  7. Oven method: Bake at 400°F on a rack for 15-20 minutes, then broil for 2-3 minutes for crisp edges.
  8. Optional: Brush hot skewers with melted butter before serving.
