Ingredients
  

  • 1 large egg
  • ½ cup shredded mozzarella cheese mild white cheese works too
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp almond flour or coconut flour, optional for structure
  • ½ tsp baking powder
  • 1-2 tsp keto-friendly sweetener erythritol, monk fruit, or allulose
  • Pinch of salt
  • ½ tsp vanilla extract optional, for extra flavor

Method
 

  1. Preheat your mini waffle maker for 3 minutes.
  2. In a mixing bowl, whisk the egg until smooth.
  3. Stir in mozzarella, cocoa powder, almond flour, baking powder, sweetener, salt, and vanilla extract (if using). Mix until well combined.
  4. Lightly grease the waffle maker plates if needed.
  5. Pour half the batter into the waffle maker and close the lid. Cook for 3–4 minutes, or until set and crisp on the outside.
  6. Remove and repeat with the remaining batter.
  7. Let cool for 1–2 minutes on a wire rack to firm up.
  8. Serve plain, or top with sugar-free syrup, whipped cream, or fresh berries.

Notes

  • For extra fudgy chaffles, add a few sugar-free chocolate chips to the batter.
  • For a softer cake-like texture, add 1 tsp cream cheese.
  • These freeze well for up to 2 months; just reheat in the toaster or air fryer.
  • Perfect as a base for keto desserts like ice cream sandwiches or layered with whipped cream.
