Preheat your mini waffle maker for 3 minutes.
In a mixing bowl, whisk the egg until smooth.
Stir in mozzarella, cocoa powder, almond flour, baking powder, sweetener, salt, and vanilla extract (if using). Mix until well combined.
Lightly grease the waffle maker plates if needed.
Pour half the batter into the waffle maker and close the lid. Cook for 3–4 minutes, or until set and crisp on the outside.
Remove and repeat with the remaining batter.
Let cool for 1–2 minutes on a wire rack to firm up.
Serve plain, or top with sugar-free syrup, whipped cream, or fresh berries.
