Instructions
Blend the Cottage Cheese: In a blender or food processor, blend until cottage cheese; third step. It helps eliminate the graininess and gives you a much better texture to your ice cream.
Combine: In the blender, add the heavy cream, honey (or maple syrup), vanilla extract and a pinch of salt to blend cottage cheese. Add the milk at this point for a slightly softer ice cream and blend again until fully incorporated.
Cool the Mixture: After combining your ice cream base, pour it into a bowl or airtight container and place it in your refrigerator for 30 minutes. It cools it off before churning.
Churn the ice cream: If you use an ice cream maker, then churn the line per your device's instructions. This usually takes about 20-30 mins. This step is optional; if you don't have an ice cream maker, go directly to the freezing part.
To Freeze: Pour the churned ice cream into a container and freeze for 4-6 hours or until set.
To serve: scoop into bowls or cones. Use chocolate chips, fruit, or drizzle with honey if desired.
