Ingredients
  

  • 2 cups cottage cheese full-fat or low-fat
  • 1 cup heavy cream or coconut cream for a dairy-free version
  • 1/2 cup honey or maple syrup for a natural sweetener
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/4 cup milk dairy or plant-based, depending on preference
  • Optional: 1/4 cup chocolate chips or fresh fruit for added flavor

Instructions
 

  • Blend the Cottage Cheese: In a blender or food processor, blend until cottage cheese; third step. It helps eliminate the graininess and gives you a much better texture to your ice cream.
  • Combine: In the blender, add the heavy cream, honey (or maple syrup), vanilla extract and a pinch of salt to blend cottage cheese. Add the milk at this point for a slightly softer ice cream and blend again until fully incorporated.
  • Cool the Mixture: After combining your ice cream base, pour it into a bowl or airtight container and place it in your refrigerator for 30 minutes. It cools it off before churning.
  • Churn the ice cream: If you use an ice cream maker, then churn the line per your device's instructions. This usually takes about 20-30 mins. This step is optional; if you don't have an ice cream maker, go directly to the freezing part.
  • To Freeze: Pour the churned ice cream into a container and freeze for 4-6 hours or until set.
  • To serve: scoop into bowls or cones. Use chocolate chips, fruit, or drizzle with honey if desired.

Sweetener Adjustment: Feel free to adjust the sweetness depending on your preference. You can use stevia or erythritol for a lower-calorie version.
