Instructions
Step 1 (Prepare the Batter): In a bowl, add the cottage cheese, eggs and vanilla extract. Mix until well blended. Mix flour, baking powder, sugar & salt to the mixture. Blend until smooth and just combined.
Step 2 (Heat the Pan): Spray a non-stick skillet or griddle with cooking spray. Melt some butter or require a tiny bit of oil and set it aside on the side.
Step 3 (Cook the Pancakes): Pour about ¼ cup of batter onto the skillet. When the surface appears to be bubbly and the edges seem cooked, in 2-3 minutes. Flip and cook for 2 more minutes, or until golden brown and no longer pink in the centre.
Step 4 (Serve): Enjoy your Cottage Cheese Pancakes warm and serve with yogurt, slash of honey/maple syrup or fresh fruits.
Notes
For fluffier pancakes, use oat flour or add a bit more baking powder.
