Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup of uncooked long-grain white rice
  • 2 cups of chicken broth
  • 1 can 10.5 oz of condensed cream of chicken soup
  • 1 cup of frozen mixed vegetables peas, carrots, corn
  • 1 small onion finely chopped
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste
  • 1 cup of shredded cheddar cheese optional

Instructions
 

  • Place the chicken breasts at the bottom of the crock pot.
  • Add the uncooked rice, chicken broth, and condensed cream of chicken soup.
  • Sprinkle the chopped onions, garlic powder, onion powder, salt, and pepper over the mixture.
  • Stir to combine everything, ensuring the rice is spread evenly at the bottom.
  • Cook on low for 4-6 hours, or until the chicken is cooked through and the rice is tender.
  • In the last 30 minutes of cooking, stir in the frozen mixed vegetables.
  • (Optional) In the last 10 minutes of cooking, sprinkle shredded cheddar cheese over the top and let it melt.
  • Serve warm and enjoy!

Notes

  • If you want to make this recipe even more appealing for picky eaters, use only their favorite veggies or skip them altogether.
  • Use a low-sodium chicken broth for a healthier version.
