This easy and flavorful Crockpot Chicken Piccata combines tender chicken breasts with a tangy lemon-caper sauce. Simply set it in your slow cooker for a fuss-free dinner that can be served over pasta, rice, or veggies.
Season the chicken breasts with salt and pepper. If desired, heat olive oil in a skillet over medium heat and brown the chicken breasts on both sides for about 2-3 minutes each. This step is optional, but it enhances the flavor of the chicken.
Add to the Crockpot:
Place the chicken breasts into the slow cooker. Pour chicken broth, lemon juice, capers, Dijon mustard (if using), garlic powder, and oregano over the chicken.
Cook:
Cover the crockpot and cook on low for 4 hours or high for 2 hours, or until the chicken is cooked through and tender.
