Prepare the Chicken:
- Season the chicken breasts with salt and pepper. If desired, heat olive oil in a skillet over medium heat and brown the chicken breasts on both sides for about 2-3 minutes each. This step is optional, but it enhances the flavor of the chicken.
Add to the Crockpot:
- Place the chicken breasts into the slow cooker. Pour chicken broth, lemon juice, capers, Dijon mustard (if using), garlic powder, and oregano over the chicken.
Cook:
- Cover the crockpot and cook on low for 4 hours or high for 2 hours, or until the chicken is cooked through and tender.
- Once cooked, remove the chicken breasts from the crockpot. Stir the sauce in the slow cooker to combine the flavors.
Serve:
- Return the chicken to the sauce and spoon some sauce over the top. Garnish with chopped parsley.
Serve Hot:
- Serve the Crockpot Chicken Piccata over pasta, rice, or with roasted vegetables for a complete meal.
Notes
- You can add a teaspoon of cornstarch mixed with water if you prefer a thicker sauce.
- For extra flavor, serve with a side of garlic bread or a green salad.
