Ingredients

  • 4 chicken quarters bone-in, skin-on
  • 1/4 cup apple cider vinegar
  • 1/2 cup water
  • 1/2 cup unsalted butter melted
  • 1/4 cup Worcestershire sauce
  • 1 tbsp salt
  • 1 tsp ground black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper optional for extra heat

Equipment

  • Large resealable bag or shallow dish (for marinating)
  • Grill (charcoal or gas)
  • Meat thermometer
  • Tongs
  • Basting brush

Method

  1. Let's start with the Marinade: Combine apple cider vinegar, water, melted butter, Worcestershire sauce, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper (if you like it spicy) in a small bowl.
  2. Now let's Marinate the Chicken: Get a large resealable bag or a shallow dish and put the chicken quarters in it. Pour the marinade you just made onto the chicken, covering all pieces. Chill the chicken in the fridge for at least 4 hours; better if left overnight to really taste the flavours.
  3. Now, let's fire up the Grill: Heat your grill to medium (350-375°F).
  4. It's time to Grill the Chicken: Take your chicken out of the bag, shake off any extra marinade. Place it skin-side down on the grill for 15-20 minutes each side until it hits 165°F (74°C). During grilling, brush on the remaining marinade to keep your chicken moist and tasty. Want crispy skin? Grilling it skin-side down on high for an extra 2-3 minutes should do the trick.
  5. To serve: Take the chicken off the grill, allow it to sit for 5 minutes, then serve it up hot with your chosen meat-lover's side dishes.

Notes

  • For a smokier flavour, use wood chips (like hickory or apple-wood) when grilling.
  • You can also cook the chicken in the oven at 375°F for about 45 minutes, then broil to crisp the skin.
