Ingredients
  

  • 1 cup self-raising flour
  • 2 tablespoons sugar
  • 1 egg
  • ¾ cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter plus extra for cooking

Equipment

  • Non-stick frying pan – for cooking pikelets

Method
 

  1. In a mixing bowl, whisk together the self-raising flour and sugar.
  2. In a separate bowl, beat the egg and mix it with the milk and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Stir in the melted butter and let the batter rest for 5 minutes.
  5. Heat a non-stick frying pan over medium heat and grease with a little butter.
  6. Drop tablespoons of batter onto the pan, cooking until bubbles form on the surface.
  7. Flip the pikelets and cook for another minute until golden brown.
  8. Repeat with the remaining batter.
  9. Serve warm with butter, jam, honey, or fresh fruit.

Notes

  • For extra fluffy pikelets, don’t overmix the batter.
  • You can substitute milk with buttermilk for a tangier flavor.
  • Store leftovers in an airtight container and reheat in a toaster or microwave.
