Ingredients
  

  • 1 cup self-raising flour
  • 2 tablespoons sugar
  • 1 egg
  • ¾ cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter plus extra for cooking

Instructions
 

  • In a mixing bowl, whisk together the self-raising flour and sugar.
  • In a separate bowl, beat the egg and mix it with the milk and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Stir in the melted butter and let the batter rest for 5 minutes.
  • Heat a non-stick frying pan over medium heat and grease with a little butter.
  • Drop tablespoons of batter onto the pan, cooking until bubbles form on the surface.
  • Flip the pikelets and cook for another minute until golden brown.
  • Repeat with the remaining batter.
  • Serve warm with butter, jam, honey, or fresh fruit.

Notes

  • For extra fluffy pikelets, don’t overmix the batter.
  • You can substitute milk with buttermilk for a tangier flavor.
  • Store leftovers in an airtight container and reheat in a toaster or microwave.
