A delicious and fluffy pikelet recipe made without eggs. Perfect for breakfast or a light snack, these pikelets are easy to make and taste just as good as traditional ones.
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, mix the milk, water, melted butter (or oil), vanilla extract, and mashed banana (or yogurt).
Gradually add the wet ingredients to the dry ingredients and whisk until smooth.
Heat a non-stick frying pan over medium heat and lightly grease with butter or oil.
Drop tablespoonfuls of batter into the pan and cook for about 1-2 minutes, until bubbles appear on the surface.
Flip and cook for another 1-2 minutes until golden brown.
Repeat with the remaining batter.
Serve warm with your favorite toppings such as honey, jam, or fruit.
Notes
For a dairy-free version, use almond, soy, or oat milk. If you don’t have self-raising flour, use plain flour and add 1 tsp baking powder. You can substitute mashed banana with applesauce for a different flavor.
