Ingredients
  

  • 1 cup self-raising flour
  • 1 tbsp sugar
  • 1/2 tsp baking powder
  • 1/2 cup milk or dairy-free alternative
  • 1/4 cup water
  • 1 tbsp melted butter or oil
  • 1 tsp vanilla extract optional
  • 1 tbsp mashed banana or yogurt egg substitute
  • Pinch of salt

Instructions
 

  • In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate bowl, mix the milk, water, melted butter (or oil), vanilla extract, and mashed banana (or yogurt).
  • Gradually add the wet ingredients to the dry ingredients and whisk until smooth.
  • Heat a non-stick frying pan over medium heat and lightly grease with butter or oil.
  • Drop tablespoonfuls of batter into the pan and cook for about 1-2 minutes, until bubbles appear on the surface.
  • Flip and cook for another 1-2 minutes until golden brown.
  • Repeat with the remaining batter.
  • Serve warm with your favorite toppings such as honey, jam, or fruit.

Notes

For a dairy-free version, use almond, soy, or oat milk.
If you don’t have self-raising flour, use plain flour and add 1 tsp baking powder.
You can substitute mashed banana with applesauce for a different flavor.
