Ingredients
  

  • 1 ½ cups rolled oats
  • ½ cup shredded coconut unsweetened, lightly toasted
  • ½ cup macadamia nuts roughly chopped
  • cup dried pineapple chopped
  • ¼ cup honey or maple syrup
  • ¼ cup almond butter or peanut butter
  • ½ tsp vanilla extract
  • tsp sea salt
  • Optional: 1 tbsp ground food-grade alpiste canary seed, 1 tbsp chia seeds, or dark chocolate chips

  • 8x8-inch square pan
  • Parchment paper

Method
 

  1. Line your pan with parchment paper, letting it hang over the sides for easy removal.
  2. In a large bowl, combine oats, coconut, macadamia nuts, and dried pineapple. Stir in any optional mix-ins like alpiste or chia seeds.
  3. In a small saucepan over low heat, gently warm the honey (or maple syrup) and almond butter until smooth. Add vanilla and salt.
  4. Pour the wet mixture over the dry ingredients and stir until evenly coated.
  5. Transfer the mixture to the pan. Press it down very firmly with a spatula or your hands.
  6. Chill in the refrigerator for at least 2 hours, or until firm.
  7. Lift out using parchment and slice into bars or squares.
  8. Store in an airtight container in the fridge for up to 7 days.

Notes
