Ingredients
  

  • 2 cups cooked chicken breast shredded (use rotisserie for ease)
  • ½ cup seedless red grapes halved
  • ½ cup diced red apple Fuji or Honeycrisp recommended
  • ¼ cup chopped celery
  • ¼ cup chopped toasted pecans
  • ½ cup mayonnaise or Greek yogurt for a lighter version
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • Optional: Fresh parsley or dill for garnish

Method
 

  1. In a large mixing bowl, add the shredded chicken, grapes, diced apple, celery, and pecans.
  2. In a separate small bowl, mix the mayo and Dijon mustard until smooth.
  3. Pour the dressing over the chicken mixture. Stir gently until everything is coated.
  4. Season with salt and pepper to taste.
  5. Let it rest in the fridge for 10 minutes so the flavors meld.
  6. Serve in lettuce cups, on croissants, or eat straight from the bowl (we won’t judge).
