Caramelize the Onions:
- Heat butter and olive oil in a large skillet over medium-low heat.
- Add sliced onions and cook, stirring occasionally, for about 25–30 minutes until deeply golden and caramelized.
- Add minced garlic and cook for 1 more minute. Remove from heat.
Prepare the Potatoes:
- Preheat oven to 375°F (190°C).
- Thinly slice the potatoes and layer half of them in a greased 9x13-inch baking dish.
- Season with salt, pepper, and thyme.
Layer & Bake:
- Spread half of the caramelized onions over the potatoes.
- Repeat with the remaining potatoes and onions.
- Pour beef broth over the layers to add flavor and moisture.
- Cover with foil and bake for 35 minutes.
Add Cheese & Finish Baking:
- Remove foil, sprinkle Gruyère and Parmesan cheese on top.
- Bake uncovered for an additional 15 minutes until the cheese is bubbly and golden brown.
Rest & Serve:
- Let the dish rest for 5 minutes before serving.
- Garnish with extra thyme if desired and enjoy!
