Ingredients
  

  • 2 large Onions Thinly sliced
  • 3 tbsp Butter Unsalted
  • 1 tbsp Olive oil For caramelizing
  • 3 cloves Garlic Minced
  • 4 medium Yukon Gold potatoes Thinly sliced
  • 1 cup Beef broth Low sodium
  • ½ tsp Salt Adjust to taste
  • ½ tsp Black pepper Freshly ground
  • 1 tsp Thyme Fresh or dried
  • 1 ½ cups Gruyère cheese Shredded
  • ½ cup Parmesan cheese Shredded

Equipment

  • 1 Large skillet: For caramelizing onions
  • 1 Baking dish (9x13): For baking the potatoes
  • 1 Knife: For slicing potatoes and onions
  • 1 Cutting board: For prep work
  • 1 Cheese grater: If using block cheese

Method
 

Caramelize the Onions:
  1. Heat butter and olive oil in a large skillet over medium-low heat.
  2. Add sliced onions and cook, stirring occasionally, for about 25–30 minutes until deeply golden and caramelized.
  3. Add minced garlic and cook for 1 more minute. Remove from heat.
Prepare the Potatoes:
  1. Preheat oven to 375°F (190°C).
  2. Thinly slice the potatoes and layer half of them in a greased 9x13-inch baking dish.
  3. Season with salt, pepper, and thyme.
Layer & Bake:
  1. Spread half of the caramelized onions over the potatoes.
  2. Repeat with the remaining potatoes and onions.
  3. Pour beef broth over the layers to add flavor and moisture.
  4. Cover with foil and bake for 35 minutes.
Add Cheese & Finish Baking:
  1. Remove foil, sprinkle Gruyère and Parmesan cheese on top.
  2. Bake uncovered for an additional 15 minutes until the cheese is bubbly and golden brown.
Rest & Serve:
  1. Let the dish rest for 5 minutes before serving.
  2. Garnish with extra thyme if desired and enjoy!

  • Swap beef broth with vegetable broth for a vegetarian version.
  • Try adding mushrooms or bacon for extra flavor.
