Ingredients
  

  • For the Chicken:
  • 1 ½ pounds 700g boneless, skinless chicken breasts or thighs, cut into bite-sized cubes
  • 3 tablespoons olive oil
  • 4 garlic cloves minced
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • For the Parmesan Coating:
  • ½ cup grated Parmesan cheese
  • ¼ cup breadcrumbs optional, for extra crunch
  • 2 tablespoons chopped fresh parsley optional, for garnish
  • Optional Vegetables for Skewers:
  • Bell peppers cut into 1-inch pieces
  • Red onion cut into chunks
  • Zucchini sliced

Instructions
 

Prepare the Chicken:

  • Whisk together the olive oil, minced garlic, Italian seasoning, paprika, salt, and salt in a large mixing bowl.
  • Make sure each piece of chicken is covered with the marinade by adding only the chicken cubes. Cover and marinate for at least 20 minutes or 2 hours for more intense flavor.

Assemble the Skewers:

  • If using wooden skewers, soak in water for 30 minutes to prevent burning.
  • Skewer the marinated chicken onto the skewers, alternating with optional veggies like bell peppers, onion, and zucchini.

Prepare the Parmesan Coating:

  • Mix Parmesan cheese and bread crumbs in a shallow bowl if using bread crumbs.

Coat the Chicken:

  • Press each chicken skewer into the Parmesan mixture to coat the chicken on all sides.

Cook the Skewers:

  • Grilling Option: For grilling, preheat the grill to medium heat. Skewer the chicken and grill for 10-12 minutes (turn the skewers every 3-4 minutes) or until the chicken is fully cooked (internal temperature of 165°F / 74°C).
  • Oven Option: Preheat the oven to 400°F (200°C). Place the skewers on a baking sheet lined with parchment paper or foil. Bake for 15-18 minutes, flipping halfway through. For a crispy finish, broil for an additional 2-3 minutes.

Serve and Garnish:

  • Remove the skewers from the heat and garnish with fresh parsley if desired. Serve immediately with your favorite dipping sauces or sides.
