Ingredients

  • For the filling:
  • 4 medium apples peeled, cored, and sliced
  • 1 tbsp lemon juice
  • 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp maple syrup or honey
  • 1 tsp gluten-free flour or cornstarch optional, for thickening
  • For the crumble topping:
  • 3/4 cup gluten-free rolled oats
  • 1/3 cup almond flour or oat flour
  • 1/4 cup chopped pecans or walnuts optional
  • 1/4 cup coconut sugar or brown sugar
  • 1/4 tsp ground cinnamon
  • Pinch of salt
  • 1/4 cup melted coconut oil or butter
  • 1/2 tsp vanilla extract

Equipment

  • 1 8x8 Baking Dish Or similar-sized oven-safe dish
  • 2 Mixing Bowls One for apples, one for crumble topping
  • 1 Peeler + Knife For prepping your apples
  • 1 Oven – Preheated to 350°F (175°C).

Method

  1. Preheat your oven to 350°F (175°C) and lightly grease or line your baking dish.
  2. Make the apple filling: In a bowl, toss sliced apples with lemon juice, cinnamon, nutmeg, sweetener, and gluten-free flour or starch if using. Pour into baking dish.
  3. Make the crumble: In another bowl, mix oats, flour, nuts, sugar, cinnamon, and salt. Stir in melted coconut oil and vanilla until crumbly.
  4. Assemble: Sprinkle crumble topping evenly over the apple mixture.
  5. Bake for 30–35 minutes, or until the topping is golden and apples are bubbling.
  6. Cool for 10 minutes before serving. Serve warm with a scoop of vanilla ice cream, yogurt, or just a big spoon!

Notes

  • Nut-free? Swap almond flour for gluten-free flour and skip the chopped nuts.
  • Want extra texture? Add a handful of raisins or dried cranberries to the apples.
  • Vegan-friendly with coconut oil and maple syrup.
  • Store leftovers in the fridge for up to 3 days — reheat in oven or microwave.
