Ingredients
  

  • 4 boneless skinless chicken breasts (trimmed and pounded thin)
  • 1/2 cup gluten-free all-purpose flour for dredging chicken
  • Salt and pepper to taste (for seasoning chicken)
  • 1 tablespoon olive oil for cooking chicken
  • 1 tablespoon butter for sauce flavor
  • 2 tablespoons fresh lemon juice from 1 large lemon
  • 1 tablespoon capers rinsed and drained
  • 1 cup low-sodium chicken broth for the sauce base

Method
 

Prep the Chicken:
  1. Season the chicken breasts with salt and pepper.
  2. Dredge the chicken breasts in the gluten-free flour, shaking off any excess flour.
Cook the Chicken:
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side.
  3. Remove the chicken from the skillet and set aside.
Make the Sauce:
  1. In the same skillet, melt the butter.
  2. Add the lemon juice, capers, and chicken broth, stirring to combine.
  3. Let the sauce simmer for 3-4 minutes to reduce slightly and develop flavor.
Finish the Dish:
  1. Return the chicken breasts to the skillet and cook for another 2-3 minutes, allowing the chicken to absorb the sauce.
  2. Taste the sauce and adjust seasoning with salt and pepper, if needed.
Serve:
  1. Garnish with freshly chopped parsley before serving.
