Ingredients

  • 1 lb ground beef or turkey
  • 1/4 cup almond flour or gluten-free oats, finely ground
  • 1 egg
  • 1/4 cup grated Parmesan cheese optional
  • 1/4 cup onion finely diced
  • 2 garlic cloves minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped parsley fresh or dried
  • Optional: a dash of chili flakes for heat
  • 1 tbsp olive oil if pan-frying

Equipment

  • 1 Mixing Bowl — to bring all the meatball magic together
  • 1 Baking Sheet or Skillet — for baking or pan-frying to perfection
  • Parchment Paper — if baking, to prevent sticking
  • 1 Spatula or Tongs — for flipping or serving
  • Airtight Container — to store leftovers or meal prep portions

Method

  1. Preheat oven to 400°F (200°C) if baking. Line a baking sheet with parchment paper.
  2. In a large bowl, mix ground meat, almond flour, egg, onion, garlic, Parmesan, herbs, salt, and pepper until well combined.
  3. Roll mixture into 1-inch balls using your hands or a small scoop.
  4. Bake for 18–20 minutes, or until golden and cooked through — OR pan-fry in olive oil over medium heat, turning until browned on all sides and fully cooked.
  5. Rest for 5 minutes before serving. Serve with marinara, in bowls, or over gluten-free pasta. Enjoy the juicy flavor party! 🧆✨

Notes

Want dairy-free? Just skip the Parmesan.
Swap almond flour for crushed gluten-free crackers or oats if preferred.
Freeze uncooked meatballs on a tray, then transfer to a bag for easy future meals!
Add chopped spinach or grated carrots for extra nutrients and moisture.
