Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Trim the stems from the golden beets and cut them into evenly sized wedges or cubes.
Place the beets in a mixing bowl, drizzle with olive oil, and season with salt and pepper. Toss gently to coat.
Spread the beets in a single layer on the baking sheet. Add garlic and herbs if using.
Roast for 35–40 minutes, turning once halfway, until fork-tender and lightly caramelized.
Remove from the oven and let cool slightly before serving.
