Ingredients
  

  • lb golden beets scrubbed
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cloves garlic lightly crushed (optional)
  • 1 tsp fresh herbs thyme or rosemary, optional

Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Trim the stems from the golden beets and cut them into evenly sized wedges or cubes.
  3. Place the beets in a mixing bowl, drizzle with olive oil, and season with salt and pepper. Toss gently to coat.
  4. Spread the beets in a single layer on the baking sheet. Add garlic and herbs if using.
  5. Roast for 35–40 minutes, turning once halfway, until fork-tender and lightly caramelized.
  6. Remove from the oven and let cool slightly before serving.

Notes

  • Roast with skins on for best flavor; they slide off easily after cooking if desired.
  • For salads, allow beets to cool fully before dressing to keep flavors bright.
  • Leftovers store well in the refrigerator for up to 4 days.
