Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
Mix dry ingredients in a large bowl — nuts, seeds, coconut, chia, cinnamon, and salt.
In a separate bowl, whisk together melted coconut oil, sweetener of choice, vanilla, and optional egg white.
Pour wet into dry and mix until everything is lightly coated and shiny.
Spread mixture evenly on prepared baking sheet in a thin layer. Press gently with a spatula.
Bake for 20–25 minutes, stirring halfway through, until golden and fragrant. Watch closely so it doesn’t burn!
Cool completely before breaking into clusters. Granola will crisp up as it cools.
Store in an airtight container at room temp for up to 2 weeks, or freeze for longer shelf life.
