Ingredients
  

  • Dry Ingredients:
  • 1 cup almonds roughly chopped
  • 1/2 cup pecans chopped
  • 1/2 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/2 cup unsweetened shredded coconut
  • 1 tbsp chia seeds
  • 1 tsp ground cinnamon
  • Pinch of sea salt
  • Wet Ingredients:
  • 1/4 cup coconut oil melted
  • 3 tbsp maple syrup or honey or sugar-free syrup for keto
  • 1 tsp vanilla extract
  • Optional: 1 egg white for extra clusters

Method
 

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients in a large bowl — nuts, seeds, coconut, chia, cinnamon, and salt.
  3. In a separate bowl, whisk together melted coconut oil, sweetener of choice, vanilla, and optional egg white.
  4. Pour wet into dry and mix until everything is lightly coated and shiny.
  5. Spread mixture evenly on prepared baking sheet in a thin layer. Press gently with a spatula.
  6. Bake for 20–25 minutes, stirring halfway through, until golden and fragrant. Watch closely so it doesn’t burn!
  7. Cool completely before breaking into clusters. Granola will crisp up as it cools.
  8. Store in an airtight container at room temp for up to 2 weeks, or freeze for longer shelf life.

Notes

  • For keto: Use monk fruit syrup and skip any dried fruit.
  • For extra crunch: Use egg white and don’t stir while baking.
  • Want a chocolate version? Add cocoa powder to the dry mix and chocolate chips after baking!
  • Make it savory: skip the sweetener, add herbs, salt, and spices like smoked paprika or cumin.
