Ingredients
  

  • Dry Ingredients:
  • 1 cup almonds roughly chopped
  • 1/2 cup pecans chopped
  • 1/2 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/2 cup unsweetened shredded coconut
  • 1 tbsp chia seeds
  • 1 tsp ground cinnamon
  • Pinch of sea salt
  • Wet Ingredients:
  • 1/4 cup coconut oil melted
  • 3 tbsp maple syrup or honey or sugar-free syrup for keto
  • 1 tsp vanilla extract
  • Optional: 1 egg white for extra clusters

Instructions
 

  • Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • Mix dry ingredients in a large bowl — nuts, seeds, coconut, chia, cinnamon, and salt.
  • In a separate bowl, whisk together melted coconut oil, sweetener of choice, vanilla, and optional egg white.
  • Pour wet into dry and mix until everything is lightly coated and shiny.
  • Spread mixture evenly on prepared baking sheet in a thin layer. Press gently with a spatula.
  • Bake for 20–25 minutes, stirring halfway through, until golden and fragrant. Watch closely so it doesn’t burn!
  • Cool completely before breaking into clusters. Granola will crisp up as it cools.
  • Store in an airtight container at room temp for up to 2 weeks, or freeze for longer shelf life.

Notes

  • For keto: Use monk fruit syrup and skip any dried fruit.
  • For extra crunch: Use egg white and don’t stir while baking.
  • Want a chocolate version? Add cocoa powder to the dry mix and chocolate chips after baking!
  • Make it savory: skip the sweetener, add herbs, salt, and spices like smoked paprika or cumin.
