Step 1: Mix the Base : In a mixing bowl combine the soy sauce, rice vinegar, sesame oil chili oil and sugar. Gently stir to dissolve sugar.
Step 2: Add Aromatics : Combine the minced garlic and grated ginger. Stir well to combine.
Step 3: Taste and Adjust : Season the sauce to taste, adding more seasoning as desired. Add more chili oil for heat, add sugar to make it sweeter or soy sauce if you like salt.
Step 4: Serve : Strain the sauce into a serving bowl. Optional-When serving top with green onions and sesame seeds.
