- Preheat the oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Place a sheet of parchment paper on a baking sheet.
- Mix Wet Ingredients: In a medium bowl, mix the unsweetened applesauce, coconut sugar, egg, and vanilla extract. Combine well until well-blended and smooth.
- Stir Dry Ingredients: The whole wheat flour, baking soda, salt, and ground flaxseeds go in a separate bowl, which you'll want to combine. If you're adding cinnamon, add it here, too.
- Add Dry Ingredients to Wet: Slowly add the dry ingredients to the wet mixture and mix until a dough forms.
- Add dark chocolate chips: If using, gently fold the dark chocolate chips into the batter. Chocolate chips can also be replaced with chopped nuts or dried fruit for a healthier alternative.
- Shape Cookies: Scoop about one tablespoon of dough for each cookie and roll it into a ball. Place the dough balls on the prepared baking sheet, spaced 2 inches apart. Gently flatten each ball with the back of a spoon.
- Bake the Cookies: Bake in the preheated oven for 8-10 minutes or until the edges are golden brown. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
