Ingredients

  • 1/2 cup unsweetened applesauce replace butter
  • 1/4 cup coconut sugar or stevia, to reduce sugar content
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour instead of white flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup dark chocolate chips optional, for lower sugar
  • 2 tablespoons ground flaxseeds for added fiber
  • 1/2 teaspoon cinnamon optional for extra flavor

Equipment

  • Mixing bowls
  • Whisk
  • Spoon or cookie scoop
  • Baking sheet
  • Parchment paper
  • Cooling rack

Method

  1. Preheat the oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Place a sheet of parchment paper on a baking sheet.
  2. Mix Wet Ingredients: In a medium bowl, mix the unsweetened applesauce, coconut sugar, egg, and vanilla extract. Combine well until well-blended and smooth.
  3. Stir Dry Ingredients: The whole wheat flour, baking soda, salt, and ground flaxseeds go in a separate bowl, which you'll want to combine. If you're adding cinnamon, add it here, too.
  4. Add Dry Ingredients to Wet: Slowly add the dry ingredients to the wet mixture and mix until a dough forms.
  5. Add dark chocolate chips: If using, gently fold the dark chocolate chips into the batter. Chocolate chips can also be replaced with chopped nuts or dried fruit for a healthier alternative.
  6. Shape Cookies: Scoop about one tablespoon of dough for each cookie and roll it into a ball. Place the dough balls on the prepared baking sheet, spaced 2 inches apart. Gently flatten each ball with the back of a spoon.
  7. Bake the Cookies: Bake in the preheated oven for 8-10 minutes or until the edges are golden brown. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Coconut Sugar: This is a lower glycemic alternative to regular sugar, which can help maintain stable blood sugar levels.
Flaxseeds: These are rich in fiber and omega-3 fatty acids, which support weight loss and digestive health.
Dark Chocolate Chips: Opt for dark chocolate with at least 70% cocoa to reduce sugar content while still enjoying a rich flavor.
