Preheat your mini waffle maker for at least 3 minutes.
In a mixing bowl, whisk the egg until smooth.
Add shredded cheese, almond flour, baking powder, salt, and pepper. Mix until well combined.
Lightly grease the waffle maker (if needed).
Pour half the batter into the center and close the lid. Cook for 3–4 minutes, or until golden and crispy.
Repeat with the remaining batter.
Let the chaffles rest for 2 minutes to crisp up before serving.
