Ingredients
  

  • 2 cups Kodiak Cakes whole grain pancake mix
  • 1/2 cup milk dairy or non-dairy
  • 2 large eggs
  • 1/4 cup honey or maple syrup optional, for added sweetness
  • 1/2 cup mashed bananas optional, for flavor and moisture
  • 1/2 teaspoon vanilla extract
  • 1/4 cup vegetable oil or melted coconut oil
  • 1/2 cup of add-ins like chopped walnuts blueberries, or chocolate chips (optional)

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
  • Combine wet Ingredients: In a large bowl, whisk together the milk, eggs, honey (if using), mashed bananas (if using), vanilla, and oil until well combined.
  • In a separate bowl, mix dry ingredients: Kodiak Cakes pancake mix. Gently stir to break up any lumps.
  • Add Over, But Do Your Wet and Dry Separately: Pour the wet over the dry gradually and mix until just incorporated. Be careful not to overmix. Fold in any mix-ins (chopped nuts, chocolate chips, berries, etc.) as desired.
  • Fill Walking: Using a spoon, divide the batter among the prepared muffin tin, filling each cup ~ 2/3 full.
  • Bake: Transfer the muffin tin to the oven and bake for 18 to 22 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
  • Cool: Let the muffins cool in the pan briefly before moving them to a wire rack to cool completely.
  • Serve And Enjoy: Enjoy your Kodiak Muffins warm or at room temperature!

Notes

Customizing: Feel free to add your favorite mix-ins, such as dried fruit, seeds, or different types of nuts, to make the muffins suit your taste.
