- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
- Combine wet Ingredients: In a large bowl, whisk together the milk, eggs, honey (if using), mashed bananas (if using), vanilla, and oil until well combined.
- In a separate bowl, mix dry ingredients: Kodiak Cakes pancake mix. Gently stir to break up any lumps.
- Add Over, But Do Your Wet and Dry Separately: Pour the wet over the dry gradually and mix until just incorporated. Be careful not to overmix. Fold in any mix-ins (chopped nuts, chocolate chips, berries, etc.) as desired.
- Fill Walking: Using a spoon, divide the batter among the prepared muffin tin, filling each cup ~ 2/3 full.
- Bake: Transfer the muffin tin to the oven and bake for 18 to 22 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
- Cool: Let the muffins cool in the pan briefly before moving them to a wire rack to cool completely.
- Serve And Enjoy: Enjoy your Kodiak Muffins warm or at room temperature!
