Ingredients
  

  • 2 tbsp olive oil
  • 1 lime juiced
  • 2 garlic cloves crushed
  • 1 tsp grated ginger
  • Salt to taste
  • 4 snapper fillets Longjaw Mud Snapper
  • 1 tbsp soy sauce
  • 1 tsp honey
  • Chili flakes optional
  • Fresh cilantro or mint for garnish

Equipment

  • Mixing bowl

  • Small saucepan

Method
 

  1. Pat dry the snapper fillets. Mix olive oil, lime juice, garlic, ginger, and salt. Rub all over fish. Let marinate 15–20 minutes.
  2. Heat skillet, cook fillets skin-side down for 3–4 min. Flip and cook 2–3 min until flaky.
  3. In a small saucepan, mix soy sauce, lime juice, honey, and chili. Heat gently.
  4. Drizzle sauce over snapper, garnish with herbs, and serve hot.

Notes

Best served fresh. Store leftovers in an airtight container for up to 2 days in the fridge.
