- 2 boneless skinless chicken breasts
- 2 tablespoons olive oil

- 1 cup heavy cream
- 1 cup chicken broth
- ½ cup grated Parmesan cheese
- ½ cup sun-dried tomatoes chopped
- 1 teaspoon red pepper flakes optional
- Fresh basil leaves for garnish
- Salt and pepper to taste
Season and Sear the Chicken: Rub Italian seasoning, garlic powder, smoked paprika, salt, and pepper on chicken breasts. In a large skillet, heat olive oil over medium heat. Sear the chicken for 4-5 mins on both sides until golden. Transfer from the skillet and reserve.
Prepare the Sauce: In the same skillet, stir in chicken broth and bring to a simmer. Add heavy cream, Parmesan cheese and sun-dried tomatoes. Let it bubble away for 3–5 minutes until the sauce reduces a little.
Instructions Cook the Chicken and Tortellini: Add the chicken breasts back into the skillet and simmer for 10 more minutes to make sure they are fully cooked. In the meantime, cook the tortellini according to package directions. Drain and set aside.
Combine and Serve: Add the cooked tortellini to the skillet, tossing gently to coat with the creamy sauce. Sprinkle red pepper flakes if desired. Garnish with fresh basil leaves and serve immediately.
Substitute sun-dried tomatoes with fresh cherry tomatoes for a lighter flavor.
