Prepare the Batter:
- In a mixing bowl, whisk together the flour, baking powder, sugar, and salt.
- In another bowl, whisk the milk, egg, melted butter, and vanilla extract.
- Slowly pour the wet ingredients into the dry ingredients, stirring until just combined (do not overmix).
Preheat the Skillet:
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or butter.
Cook the Hotcakes:
- Pour about ¼ cup of batter onto the skillet for each hotcake.
- Cook for 1-2 minutes until bubbles appear on the surface.
- Flip and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter.
Serve:
- Stack the hotcakes and serve with butter and maple syrup, just like McDonald's!
Notes
For extra fluffiness, let the batter rest for 5 minutes before cooking.
