Ingredients
  

  • For the Meatloaf
  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • For the Mashed Potatoes
  • 4 medium potatoes peeled and chopped
  • 1/4 cup milk
  • 2 tbsp butter
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine ground beef, breadcrumbs, egg, milk, onion, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix until just combined.
  3. Transfer the mixture to a loaf pan and shape into a loaf.
  4. Bake for 50–60 minutes or until the internal temperature reaches 160°F (71°C).
  5. Meanwhile, boil potatoes in salted water until fork tender (about 15–20 minutes).
  6. Drain potatoes and mash with milk, butter, salt, and pepper.
  7. Let the meatloaf rest for 10 minutes before slicing.
  8. Serve slices of meatloaf with a generous scoop of mashed potatoes.
