Ingredients
  

  • 1 lb Patagonian scallops thawed and patted dry
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 clove garlic minced
  • Juice and zest of 1 lemon
  • Salt and black pepper to taste
  • 1 tbsp fresh parsley chopped

Equipment

  • Cast iron or stainless steel skillet (for searing)
  • Tongs (for flipping scallops)
  • Paper towels (to pat scallops dry)

Method
 

  1. Prep the scallops: Pat the scallops dry with paper towels. Season both sides with salt and pepper. Let them rest for 10 minutes at room temp.
  2. Heat the pan: Add olive oil and butter to a skillet over medium-high heat. Once the butter foams and starts to brown, it’s ready.
  3. Sear the scallops: Add scallops without crowding. Sear for 1.5–2 minutes per side until golden brown. Don’t move them around during cooking.
  4. Finish with flavor: Turn off heat, add garlic and lemon juice. Swirl to coat the scallops in garlicky butter. Garnish with parsley and lemon zest. Serve immediately.

Notes

Serve these scallops hot and fresh for the best texture. Pairs well with arugula salad, cauliflower mash, or over lemony pasta.
