- Prep the scallops: Pat the scallops dry with paper towels. Season both sides with salt and pepper. Let them rest for 10 minutes at room temp.
- Heat the pan: Add olive oil and butter to a skillet over medium-high heat. Once the butter foams and starts to brown, it’s ready.
- Sear the scallops: Add scallops without crowding. Sear for 1.5–2 minutes per side until golden brown. Don’t move them around during cooking.
- Finish with flavor: Turn off heat, add garlic and lemon juice. Swirl to coat the scallops in garlicky butter. Garnish with parsley and lemon zest. Serve immediately.
