- Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
- Mix the peaches, sugar, lemon juice, cinnamon, salt and cornstarch in a large bowl. Mix until well blended. Transfer the peach mixture to the prepared baking dish.
- Combine the flour, baking powder, milk, vanilla extract and one tablespoon of sugar to create batter in another bowl.
- Spoon the batter over the peaches, spreading it evenly but leaving some spaces. Top with pieces of butter.
- In a small bowl, mix 1/4 cup sugar and 1/2 teaspoon cinnamon. Sprinkle over the top of the cobbler.
- Bake in the preheated oven for 45-50 minutes until the top is golden brown and the filling is bubbly.
- Let cool slightly before serving. Enjoy your peach cobbler with vanilla ice cream or whipped cream.
Notes
For a richer flavor, you can add a dash of nutmeg to the peach filling.

You can substitute almond flour or whole wheat flour for a healthier alternative.
