- 4 cups fresh or canned peaches drained if canned
- 1 cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 tablespoon cornstarch
- 1/2 cup unsalted butter cut into small pieces
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/4 cup sugar for topping
- 1/2 teaspoon ground cinnamon for topping
Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
Mix the peaches, sugar, lemon juice, cinnamon, salt and cornstarch in a large bowl. Mix until well blended. Transfer the peach mixture to the prepared baking dish.
Combine the flour, baking powder, milk, vanilla extract and one tablespoon of sugar to create batter in another bowl.
Spoon the batter over the peaches, spreading it evenly but leaving some spaces. Top with pieces of butter.
In a small bowl, mix 1/4 cup sugar and 1/2 teaspoon cinnamon. Sprinkle over the top of the cobbler.
Bake in the preheated oven for 45-50 minutes until the top is golden brown and the filling is bubbly.
