Ingredients
  

  • 4 cups fresh or canned peaches drained if canned
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon cornstarch
  • 1/2 cup unsalted butter cut into small pieces
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar for topping
  • 1/2 teaspoon ground cinnamon for topping

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • Mix the peaches, sugar, lemon juice, cinnamon, salt and cornstarch in a large bowl. Mix until well blended. Transfer the peach mixture to the prepared baking dish.
  • Combine the flour, baking powder, milk, vanilla extract and one tablespoon of sugar to create batter in another bowl.
  • Spoon the batter over the peaches, spreading it evenly but leaving some spaces. Top with pieces of butter.
  • In a small bowl, mix 1/4 cup sugar and 1/2 teaspoon cinnamon. Sprinkle over the top of the cobbler.
  • Bake in the preheated oven for 45-50 minutes until the top is golden brown and the filling is bubbly.
  • Let cool slightly before serving. Enjoy your peach cobbler with vanilla ice cream or whipped cream.

Notes

For a richer flavor, you can add a dash of nutmeg to the peach filling.
