Ingredients
  

  • 1 lb ground beef or lamb, for a richer flavor
  • 1 medium onion grated
  • 1 tbsp saffron threads optional but adds rich flavor
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1/2 tsp cinnamon optional, for extra warmth
  • Salt and pepper to taste
  • 1 tbsp olive oil for greasing the grill

Instructions
 

  • Prepare the Meat Mixture: In a large mixing bowl, combine the ground meat with the grated onion, saffron, turmeric, cumin, cinnamon, salt, and pepper. Mix well, ensuring the spices are evenly distributed. Knead the mixture for about 10 minutes to make it firm and cohesive.
  • Shape the Kebabs: Divide the meat mixture into 4 equal portions. With wet hands, shape each portion around a skewer, pressing the meat gently to form a long, uniform kebab. Repeat with the remaining portions.
  • Grill the Koobideh: Preheat your grill or grill pan to medium-high heat. Brush the grill with olive oil to prevent sticking. Place the skewers on the grill and cook for about 5-7 minutes per side, turning occasionally, until the Koobideh is cooked through and has a nice golden-brown color.
  • Serve: Serve the Koobideh kebabs with grilled tomatoes, Persian rice (such as Zereshk Polo), or flatbread. Garnish with fresh herbs for added flavor.
