Step 1: Preheat the Oven : Preheat the oven to 350°F (175°C). Preheat oven to 350 F. Grease and flour a 9×13-inch baking dish or two 9-inch round cake pans.
Step 2 Combine the Dry Ingredients : In a separate medium bowl, whisk the flour with the baking powder, soda and salt. Set aside.
Step 3 : Mix butter and sugar together : In a large mixing bowl, cream together the softened butter and sugar using a hand mixer or stand up mixer until light and fluffy (around 2-3 minutes).
Step 4: Add Eggs and Vanilla : Add the eggs one at a time while continuing to beat, then add vanilla in.
Step 5 : Mix the Batter Given Wet and Dry Steps : Add the dry ingredients to wet mixture alternately with crushed pineapple. Mix until just combined. At the same time, if you like a moist cake, then add ½ cup of milk at this stage only.
Step 6: Bake the Cake : Batter should be poured into the prepared baking dish or cake pans. Spread with spatula. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into centre comes out clean.
Step 7: Make the Glaze (if using) : Mix the powdered sugar, pineapple juice and reserved melted butter together in a small bowl to make the glaze while cake is baking. If the desired consistency has not yet been reached, add more pineapple juice or sugar.
Step 8: Glaze and Serve : Then once it is cooked, take out from the oven and allow to cool a little. Pineapple Glaze: Drizzle over warm cake for additional sweetness. Allow cake to completely cool before slicing and serving.
