Step 1: Marinate and Sear the Pork Belly
- In a mixing bowl, combine soy sauce, mirin, sake (if using), brown sugar, minced garlic, and sliced ginger.
- Place the pork belly in the marinade, ensuring it's well-coated. Cover and marinate for at least 30 minutes (overnight is ideal for deeper flavor).
- Heat a large skillet over medium-high heat. Sear the pork belly on all sides until golden and crispy.
Step 2: Braise the Pork Belly
- Transfer the seared pork belly to a pot or saucepan.
- Pour in the marinade and chicken broth. Cover and simmer on low heat for 1.5–2 hours until the pork belly is tender and flavorful.
- Remove the pork belly and let it rest. Once cool, slice it into thin pieces for serving.
Step 3: Prepare the Ramen Broth
- In a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger; sauté until fragrant.
- Stir in chili paste (if using), soy sauce, and miso paste. Mix well to combine.
- Pour in chicken stock and bring to a simmer. Add fish sauce if desired for extra umami. Keep the broth warm until serving.
Step 4: Cook the Ramen Noodles
- Boil water in a pot and cook the ramen noodles according to package instructions.
- Drain and set aside.
