Prepare the Pork Chops:
- Dry the pork chops with a paper towel.
- Pat salt, pepper and paprika on both sides.
Sear the Pork Chops:
- In a large skillet, heat the olive oil over medium-high heat.
- Add the pork chops and sear for about 3 minutes per side until golden brown.
- Transfer to a plate and set aside.
Cook the Aromatics:
- Lower the heat to medium in the same skillet and sauté the onion until softened (about 3 minutes).
- Add the minced garlic and cook for another 1 minute.
Prepare the Sauce:
- Add in the cream of mushroom soup, chicken broth, Worcestershire sauce and sour cream.
- Whisk the mixture until smooth and bubbling.
Simmer the Pork Chops:
- Add the pork chops back to the skillet so they're coated with the sauce.
- Lower the heat to low, cover, and simmer for 30 minutes or until the pork chops are tender.
Optional Garnish:
- Sprinkle with shredded cheddar cheese and chopped parsley before serving.
Notes
Use bone-in pork chops for extra flavor and juiciness.
To prevent the sour cream from curdling, add it off the heat and stir it in gently.
If you prefer a thicker sauce, let it simmer uncovered for the last 5 minutes.
