Ingredients
  

  • 2 lbs pork riblets
  • 1/4 cup brown sugar
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper optional
  • Salt and black pepper to taste
  • 1/2 cup barbecue sauce
  • 2 tbsp honey
  • 2 tbsp apple cider vinegar
  • 1 tbsp olive oil

Instructions
 

  • Preheat the Oven: Preheat your oven to 325°F (165°C). Line a baking sheet with aluminum foil for easy cleanup.
  • Prepare the Riblets: Pat the pork riblets dry with a paper towel. In a mixing bowl, combine the brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper. Rub this spice mixture all over the riblets, ensuring even coverage.
  • Bake the Riblets: Place the riblets on the prepared baking sheet and cover tightly with another layer of foil. Bake in the preheated oven for 2 hours, or until the riblets are tender and the meat is starting to pull away from the bone.
  • Prepare the Glaze: While the riblets bake, mix the barbecue sauce, honey, and apple cider vinegar in a small bowl. Warm the mixture slightly for easier application.
  • Caramelize the Riblets: After 2 hours, remove the foil from the riblets and brush them generously with the glaze. Increase the oven temperature to 425°F (220°C) and return the riblets to the oven for 10–15 minutes, or until the glaze is caramelized and sticky.
  • Optional Grilling: For extra smokiness, transfer the glazed riblets to a hot grill or skillet and sear for 2–3 minutes on each side.
  • Serve: Remove the riblets from the oven or grill and let them rest for 5 minutes. Serve hot with extra barbecue sauce on the side.

Notes

Marinate the riblets overnight in the spice rub for extra flavor.
Adjust the spice level by adding more or less cayenne pepper.
