- Preheat your oven to 350°F (175°C). Lightly grease a 9 × 5-inch loaf pan with nonstick cooking spray or line it with parchment paper, leaving a little overhang on the sides for easier removal. Set aside while preparing the batter.
- Use fully baked and completely cooled brownies. Cut them into approximately 1/2 to 3/4-inch cubes. For cleaner pieces, refrigerate the brownies before cutting or place the chunks in the freezer for 15–20 minutes. Reserve a few pieces for decorating the top of the loaf, if desired.
- In a medium mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, ground ginger, nutmeg, and optional cloves. Mix until the spices and leavening agents are evenly distributed throughout the flour.
- In a separate large mixing bowl, whisk the eggs, brown sugar, and granulated sugar until well combined and slightly lighter in color, approximately 1 minute.
- Pour the vegetable oil into the egg-and-sugar mixture. Add the pure pumpkin puree and vanilla extract. Whisk until the mixture becomes smooth, evenly colored, and fully combined. Scrape down the sides of the bowl as needed.
- Gradually add the dry ingredients to the pumpkin mixture. Using a rubber spatula, gently fold the ingredients together until no large streaks of dry flour remain. Avoid overmixing, which can make the pumpkin bread dense or tough. The batter should be thick but spreadable.
- Reserve approximately 1/4 cup of the brownie chunks for topping. Gently fold the remaining brownie pieces into the pumpkin batter using a spatula. Use slow, careful movements to avoid breaking the brownies apart. If desired, lightly dust the brownie pieces with a little flour taken from the recipe's measured quantity before folding them in.
- Pour the pumpkin brownie batter into the prepared loaf pan. Spread the surface evenly using a spatula. Scatter the reserved brownie chunks over the top, pressing them very lightly into the batter. Add optional chocolate chips or chopped nuts if desired.
- Place the loaf pan on the center rack of the preheated oven. Bake at 350°F (175°C) for approximately 60–75 minutes, checking around the 55-minute mark. If the top begins to brown too quickly, loosely cover it with aluminum foil. The bread is ready when a toothpick inserted into the pumpkin portion near the center comes out clean or with a few moist crumbs, but no raw pumpkin batter. Avoid inserting the toothpick directly into a brownie piece because the fudgy chocolate can make the bread appear underbaked.
- Remove the loaf from the oven and let it cool in the pan for approximately 15 minutes. Carefully lift it out using the parchment paper and transfer it to a wire rack. Allow it to cool for at least another 30 minutes, preferably until completely cooled, before slicing. This helps the crumb set and keeps the brownie pieces from smearing.
- Use a sharp serrated knife to cut the Pumpkin Bread with Brownie Chunks into approximately 12 slices. Serve at room temperature or gently warm individual slices if desired. Enjoy plain, with a cup of coffee, or alongside a scoop of vanilla ice cream for an extra-indulgent dessert.
Notes
Use 100% pure pumpkin puree, not pumpkin pie filling. Pumpkin pie filling already contains added sugar and spices, which can change the flavor and texture of the bread.
For the richest chocolate flavor, choose fully baked, dense, fudgy brownies rather than light, cake-like brownies.
Allow brownies to cool completely before cutting them. Warm brownies may crumble or blend into the pumpkin batter instead of forming distinct chunks.
Cut the brownies into pieces approximately 1/2 to 3/4 inch in size. Oversized pieces may sink toward the bottom or create unevenly baked sections.
For cleaner brownie chunks, refrigerate the brownies or briefly freeze the cut pieces for 15–20 minutes before folding them into the batter.
Lightly dusting brownie pieces with a small amount of flour taken from the measured recipe ingredients may help reduce sinking, although some sinking is normal.
Avoid overmixing the pumpkin batter after adding the flour. Mix only until the dry ingredients are incorporated to maintain a soft, tender crumb.
For the best pumpkin flavor, use ground cinnamon, ginger, and nutmeg. You may substitute approximately 2 teaspoons of pumpkin pie spice for the individual spices if preferred.
Use room-temperature eggs for easier mixing and a more uniform batter.
Line your loaf pan with parchment paper and leave an overhang on the sides. This makes removing the bread easier without damaging the crust.
If the top of the loaf becomes too brown before the center finishes baking, loosely cover it with aluminum foil for the remaining baking time.
When checking doneness, insert the toothpick into an area of pumpkin bread rather than directly into a brownie chunk. Fudgy chocolate may remain soft even when the pumpkin bread is fully baked.
For added crunch, gently fold 1/4 cup chopped walnuts or pecans into the batter along with the brownie pieces.
For an extra-chocolatey loaf, sprinkle a small amount of semi-sweet chocolate chips over the surface before baking.
Let the pumpkin bread cool before slicing. Cutting it while very hot can cause the tender crumb to break and the brownie chunks to smear.
Storage: Keep the cooled bread in an airtight container at room temperature for approximately 1–2 days in a cool kitchen. Refrigerate for longer storage and enjoy within approximately 4–5 days.
Freezing: Wrap individual cooled slices tightly in plastic wrap and place them in a freezer-safe bag or container. Freeze for up to 2–3 months for best quality.
Make Ahead: Prepare and cool the brownies in advance. This saves time on baking day and makes cutting neat brownie chunks easier.
Avoid filling the loaf pan more than approximately three-quarters full. If the batter exceeds this level, bake the excess separately in a muffin cup to prevent overflowing.
Serving Suggestion: Enjoy a slice with hot coffee, tea, or a scoop of vanilla ice cream. The combination of warm pumpkin spice and rich chocolate makes this loaf especially delicious during fall.
