Ingredients
  

  • Pumpkin Soup Base:
  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 3 cups pumpkin purée
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream or coconut milk
  • 1 tsp dried thyme or rosemary
  • ½ tsp smoked paprika
  • Salt & pepper to taste
  • Gnocchi:
  • 1 package 500g shelf-stable or refrigerated gnocchi
  • Optional Toppings
  • Fresh parmesan
  • Crispy sage
  • Olive oil drizzle

Equipment

  • 1 Large pot
  • 1 Wooden spoon
  • 1 Cutting board
  • 1 Chef's knife
  • 1 Immersion blender (or regular blender)
  • 1 Ladle

Method
 

Make the Pumpkin Soup
  1. Heat olive oil in a large pot over medium heat. Add onions and sauté for 3–4 minutes until softened.
  2. Stir in garlic and cook until fragrant.
  3. Add pumpkin purée, broth, herbs, smoked paprika, salt, and pepper.
  4. Bring to a simmer, cover, and cook for 10 minutes to blend flavors.
  5. Blend with an immersion blender until silky smooth. Stir in the cream and adjust seasoning.
Cook the Gnocchi
  1. Add gnocchi directly to the pot. Simmer 4–5 minutes until they float and turn tender.
Assemble & Serve
  1. Ladle into bowls and finish with parmesan, crispy sage, or a drizzle of olive oil.
