Ingredients
  

  • 1 lb carrots peeled and chopped into 1-inch chunks
  • 1 ½ cups water or low-sodium vegetable broth
  • ½ tsp salt adjust to taste
  • 1 tbsp olive oil or unsalted butter
  • Optional: 1 garlic clove or pinch of cumin for savory twist

Method
 

  1. Prepare the Carrots: Peel the carrots and chop into evenly-sized chunks. This ensures even cooking and smooth texture.
  2. Cook Until Tender: In a medium saucepan, add the carrots and enough water or broth to cover. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until fork-tender.
  3. Drain & Cool Slightly: Once tender, drain the carrots (reserve a bit of the cooking liquid in case needed for blending). Let them sit for 3–5 minutes to cool slightly.
  4. Blend to Puree: Transfer carrots to a blender or food processor. Add olive oil or butter, salt, and any optional flavorings (like garlic or cumin). Blend until silky smooth. Add a splash of reserved cooking liquid if needed to reach your preferred consistency.
  5. Taste and Adjust: Taste the puree and adjust seasoning as needed.
  6. Serve or Store: Serve warm as a side dish, or chill and use in bowls, sauces, or baby food prep. Store in airtight containers in the fridge for up to 4 days, or freeze for up to 1 month.

Notes

  • For babies: Omit salt and use water or homemade broth.
  • For elegant meals: Add a touch of nutmeg or thyme.
  • Pairs beautifully with roasted chicken, fish, or grain bowls.
