Prepare the produce. Rinse and chop the purple cabbage, beetroot, and apple into small pieces for easier blending.
Blend everything. Add cabbage, beetroot, apple, blueberries, lemon juice, chia seeds, and water into your blender.
Process until smooth. Blend for 45–60 seconds until the mixture turns into a vibrant, deep-purple liquid.
Optional strain. If you prefer a lighter texture, strain using a fine mesh sieve. Otherwise, keep it whole for maximum fiber.
